Both Mintel and The NPD Group have released their predictions for the biggest foodservice trends of 2017. Between the two lists, there were a few reoccurring themes operators should be watching out for next year. Healthier choices Plant and grain-based diets show no signs of slowing down next year. Operators need to be able to talk confidently about the health benefits of all dishes, as well as accommodating a wide range of dietary choices. Swifter service Through the year, we’ve seen that guests are increasingly impatient with slow service. Both firms agree that in 2017, time will be of the essence. “Speed of delivery […] will be key to a great customer service experience”, said the NPD Group. Traditional with a twist Guests are again enjoying classic, familiar dishes, and operators should expect to see traditional comfort foods appearing on menus. However, both firms emphasised the importance of putting a modern and innovative twist on the classics, to keep things interesting for guests. Ethical guests Socially and politically active, the younger generations of guests make their purchasing decisions in line with their ethical beliefs. In addition, Mintel highlighted food waste reduction and locally sourced dishes as important issues for guests of all ages. Experience wanted With rising costs hitting hospitality from all quarters, it’s only a matter of time before some of those costs get passed on to the guests. The NPD Group stressed that operators will need to make sure that the quality of both their F&B and service is better than ever to keep the guest experience good value.
